Italian amari: our idea of the end of the meal
The end of dinner is not a formality: the right amaro can close the evening slowly, with aroma and character.
An amaro at the end of a meal is an Italian tradition, but for us it should not be automatic. It can be a way to close dinner calmly, choose one last aroma and leave the table with a precise memory.
We are interested in amari that differ from one another: herbal, citrusy, balsamic, sweeter or drier. Some are immediate, others ask for a slower sip. There is no single right amaro for everyone, and that is exactly what makes it interesting.
Advice matters. After a dinner from the wood fire, a more vegetable-led menu or an important dessert, the final glass can change. We like listening to what the guest is looking for and finding the amaro they were in the mood for without knowing it.
