Everything begins with a dough. This menu tells the story of what happens every morning in our kitchen, before we even open the doors: flour, water, yeast and patience. Three courses built around our leavened breads: a maritozzo with asparagus, fresh cheese cream and honey-cooked pancetta, a tasting of our pan-baked leavened specialties (Orto, Pulled Pork, Trota Marinata), and to close, rose cake with vanilla cream.
