A good wine list is not only about quantity: it is about listening, knowledge and finding the right glass for the moment.
A wine list can be read in many ways. Some guests look immediately for a region, others for a winery, a grape, a price or simply a glass that will go well with dinner. For us, the point is not to place guests in front of an endless list, but to accompany them in the choice.
Advice in the cellar has value when it begins with listening. There is no need to show everything one knows. What matters is understanding what you feel like drinking, what dishes you have ordered and what kind of evening you want to experience. Sometimes the right wine is local, sometimes it comes from further away. Sometimes it is a known label, sometimes a small surprise.
Our selection favours small producers, often from the area, who can express an identity and a way of working. We like to look for bottles with a story, but also wines that truly belong at the table, without becoming intrusive protagonists.
Alongside wine there are cocktails, alcohol-free proposals, bitter tonics, Italian amari and international whiskies. Here too, advice matters. An aperitif can open the meal well, an amaro can close it in the right way, a whisky can become a small story after dinner.
Letting yourself be guided does not mean giving up your own taste. It means placing it at the centre and allowing those who know the cellar to find a possible path. Sometimes it is enough to say: I would like something fresh, soft, aromatic or unusual.
Our work is to turn those words into a glass. And when that happens, the cellar stops being a list and becomes part of hospitality.
