Bitter tonic: tonic is not only for gin
Bitter tonic brings the aromatic side of Italian amari into a fresh, fragrant and less predictable glass.
Gin and tonic opened a path, but tonic is not only for gin. We like using it with Italian amari and bitters too, creating fresh, aromatic drinks that show another way of drinking.
Bitter tonic works through balance: the amaro brings herbs, roots, citrus, spices and depth; tonic adds freshness, bubbles and a lighter side. The result can be an aperitif, an informal after-dinner drink or something different from the usual choice.
It looks simple, but it changes completely with each amaro: sweetness, dryness, balsamic notes, citrus and intensity all move. That is why we like offering it as a small choice guided by the guest's taste and the moment of the evening.
