Heart is not an indifferent ingredient. It has a strong name, a precise texture and a flavour that needs restraint. When it enters the kitchen, it asks for attention: no special effects, no forcing, just a preparation that respects its identity.
We are interested in it because it expresses a way of cooking that tries not to waste and not to choose only what is easiest. Working with less common cuts means looking at the ingredient more responsibly, but it also opens up very interesting flavours.
Heart can be quick, clear and almost essential. It needs correct cooking and clean accompaniments, often vegetal or slightly acidic, able to make it readable and enjoyable. When it works, it surprises through elegance rather than force.
