Some ingredients do not need to make an immediate impression. Tongue is one of them: a humble cut, close to home cooking and tradition, yet capable of real elegance when it is prepared patiently.

We like it because it asks for time. It has to be cleaned, cooked slowly, left to rest and then served without hiding its character. It is not there to shock the guest; it is there to remind us that good cooking often begins with simple gestures done properly.

Putting it on the menu also means respecting the whole animal, not only the cuts that are easier to explain. It is a matter of flavour, but also of care: taking something tradition knew well and bringing it back to the table in a contemporary way.
