How we choose the wines for our cellar

Our wine list grows from tastings, meetings and small producers: bottles chosen to be shared, not simply displayed.

Choosing a wine for the list is not just adding another bottle. For us it means understanding who makes it, where it comes from, what story it carries and how it can sit beside the food.

We are drawn to small producers, often local or connected to a clear identity. We are not looking for labels to show off, but for bottles with something to say: a territory, a method, a character, a recognizable hand.

The cellar changes because the menu changes, the season changes and we change too. We taste, study, make mistakes, adjust and let ourselves be surprised. Then, in the dining room, we try to do the most important thing: listen to the guest and find the right glass for that table.
