A tavola con Albino Piona: an evening of Corvina, Custoza and conviviality

A relaxed evening with Alessandro from Cantina Albino Piona, discovering local wines, food pairings and the pleasure of sharing the table.

Some evenings work because they bring people, bottles, dishes and curiosity to the same table. Our A tavola con... evening with Alessandro from Cantina Albino Piona was exactly that: a relaxed, lively encounter dedicated to wines from our area, told by someone who knows them closely.

We started with a 2020 Metodo Classico made entirely from Corvina. It opened a different perspective on a grape we often associate with local wines such as Bardolino and Valpolicella: flexible, deep and able to surprise even in an unexpected form. Paired with a leavened pan pizza, it became one of the most appreciated moments of the evening.

Alessandro then introduced Crea, a 2021 Custoza made as an orange wine. This macerated white showed another side of Custoza and its ability to age. Serving it with a rich dish such as a pork shank crespella was especially interesting: texture, freshness and depth found a very natural balance.

With the main course, grilled lombatello, we tasted Toa, a 2020 Bardolino. Here too the theme was time: a Bardolino that showed ageing potential and, once again, the elegant strength of Corvina. Fire, meat and wine spoke the same language without forcing the pairing.

The evening ended with a peach Tarte Tatin paired with Passito. Then came a beautiful surprise: a Corvina Metodo Classico aged for 130 months on the lees, created to celebrate the winery's 130 years. A special glass, and a lovely way to close the night.

We love these evenings because they are not just themed dinners. They are moments to talk with our guests, listen to questions, discover new details about wine and enjoy the convivial spirit that makes every table different.
