Our chef Matteo Porru won the sixth edition of RicibiAMO, a contest dedicated to sustainable cooking, in the professional chef category.

The recipe came from a concrete reflection on recovery and kitchen practice: using ingredients more completely, reducing waste and creating a dish that is meaningful not only in competition, but also in everyday restaurant work.

For Le Rasole, this award speaks about a direction we believe in: not chasing effect for its own sake, but working on ideas that make sense in the dish, in the territory and in the way we cook every day.
