The Slow Food Cooks' Alliance brings together restaurants, cooks and producers who share a simple idea: food should be good, clean and fair. For us, it is not a label to display, but a way to give shape to choices we make every day.
At Le Rasole this means looking for seasonal ingredients, supporting small local producers and explaining to our guests where the products come from. The relationship with the territory enters the menu, the wine list, the events and the way we welcome people at the table.
Being part of the Alliance is also a responsibility: to keep studying, choosing carefully and telling the stories behind the ingredients with clarity and honesty.
