Why the menu changes often: the right moment for each ingredient

Changing the menu is not meant to unsettle guests, but to serve each ingredient when it expresses its best.

When a guest comes back and finds a different menu, the question is natural: why change so often? The simplest answer is this: we do not do it to unsettle anyone at the table, but to let each dish be tasted when its ingredients are at their best.

Seasonality is not an idea on paper. It changes for real: in the garden, at the market, in the work of small producers, in the availability of fish, in the ripeness of a vegetable and even in the mood of the kitchen. Some ingredients have a precise time, and keeping them on the menu beyond that moment risks taking something away from the dish.

That is why our menu moves. Some preparations return, others last only a short while. A dish can be born from a product that arrives in perfect condition, from the wood fire, from an herb in the garden, from an unexpected delivery or from an idea that takes shape during service.

We do not want the menu to be a rigid promise. We prefer it to be a living story, able to follow the time of year and respect what enters the kitchen. This requires organisation, listening and a little trust from the guest.

Those who come to Le Rasole do not find a menu designed to remain identical. They find a kitchen that tries to stay coherent with the territory, the season and the moment. For us, changing often means exactly this: serving a dish when it makes sense to serve it, not when it is simply convenient to keep it on the list.
