A symbolic fish of Lake Garda: it is called sarda, but it is not a sea sardine. It tells a story of lake, local fishing and simple cooking.

Lake sardine is one of the ingredients that speaks most clearly of Garda. The name can be misleading: it is not a sea sardine, but agone, a freshwater fish rooted in the lake's tradition.

We like it for its clear character and flexibility. It can become a starter, enter a first course or sit beside a very simple preparation, always bringing a savoury, local note.

When we cook it, we try to respect its story: few elements, careful cooking and pairings that keep the flavour of the fish readable.
