{"id":2106,"date":"2024-03-10T14:09:29","date_gmt":"2024-03-10T13:09:29","guid":{"rendered":"https:\/\/lerasole.it\/2024\/03\/chef-matteo-wins-the-vi-edition-of-ricibiamo\/"},"modified":"2024-03-10T14:34:37","modified_gmt":"2024-03-10T13:34:37","slug":"chef-matteo-wins-the-vi-edition-of-ricibiamo","status":"publish","type":"post","link":"https:\/\/lerasole.it\/en\/chef-matteo-wins-the-vi-edition-of-ricibiamo\/","title":{"rendered":"Chef Matteo wins the VI Edition of RicibiAMO"},"content":{"rendered":"\n<p>Our Chef Matteo Porru wins the 5th Edition of the RicibiAMO Contest, dedicated to sustainable cuisine, in the Professional Chefs category.<\/p>\n\n<p>Matteo chose to bring a recipe that he had studied and made for the staff of our restaurant, starting from recycled ingredients.<\/p>\n\n<p>The name of the recipe is &#8220;Rice, Artichoke and Pumpkin Zero&#8221;<\/p>\n\n<p>5 reasons why it&#8217;s sustainable  <br\/>&#8220;This recipe was born from a recovery of an artichoke risotto (which had to be finished with marinated trout), this &#8220;leftover&#8221; of rice in the pot became the lunch skip rice for the staff.&#8221;<\/p>\n\n<p>For this recipe we only added pumpkin in all its parts.
