Der K\u00e4se hat eine halbgekochte und gepresste Paste, hat eine strohgelbe Farbe und einen s\u00fc\u00dfen und delikaten Geschmack.<\/p>\n\n<p>Mit einer Mindestreifezeit von 60 Tagen, einer Produktion von ca. 5000 Laiben und einer auf neun Alpweiden \u00fcber 2000 Metern begrenzten Produktion (Alpe Bettelmatt, Alpe Kastel, Alpe Morasco, Alpe Toggia, Alpe Regina, Alpe Vannino, Alpe Forno, Alpe Pojala und Alpe Sangiatto).<\/p>\n\n<p>Der Name Bettelmatt (der auch der Name der Alpe Originaria der Produktion ist) leitet sich von <em>battel<\/em> ab, was Almosen bedeutet, was K\u00e4selaibe bedeutet, die f\u00fcr wohlt\u00e4tige Zwecke gespendet werden, und <em>matt<\/em>, was auf Deutsch Weide bedeutet: <em>Almweide<\/em>.<\/p>\n\n<p>PS: PAT steht f\u00fcr <a href=\"https:\/\/it.wikipedia.org\/wiki\/Prodotti_agroalimentari_tradizionali_italiani\" target=\"_blank\" rel=\"noopener\" title=\"\">Traditional Italian Agri-Food Products (Traditionelle italienische Agrar- und Lebensmittelprodukte<\/a>)<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Heute m\u00f6chten wir mit Ihnen \u00fcber einen der K\u00e4sesorten sprechen, die wir in unser Sortiment aufgenommen haben: Bettelmatt PAT.
